Description
Arctic explorer and anthropologist Vilhjalmur Stefansson spent years living with indigenous Inuit and Eskimo people, observing their remarkable health and well-being. Their diet, rich in lean meat and low in sugary or starchy carbohydrates, seemed to be the key to their good health. In 1928, Stefansson and his colleague Dr. Karsten Andersen conducted a scientific experiment at Bellevue Hospital in New York, where they ate a meat-only diet for one year. The results were striking: both men stayed healthy and thrived on the high-protein, low-carbohydrate diet. This experience led Stefansson to challenge conventional wisdom about healthy eating. Later chapters of Not By Bread Alone explore the benefits of pemmican, a compact and portable food made from dried lean bison meat, often mixed with berries. With its high energy content, pemmican was an ideal emergency ration for the military, and Stefansson advocated for its adoption.
